Caroliva is made from unique Spanish Pedro Ximenez sherry grapes that are sun dried before pressing, creating an extraordinarily sweet and aromatic vinegar which is aged 18 years in ancient wood barrels used once for dessert sherry wine. Taste it and you may never buy balsamic from Modena again.
